You really can't beat this dinner we made tonight. I'm honestly surprised I was able to stop eating long enough to take a photo, but I'm glad I did because isn't it glorious? The crust is dairy-free, and made with polenta! Genius! Even more genius is buying the pre-made polenta from Trader Joe's, because sometimes you just want things to be EASY, right?
Doesn't get any easier than this!
Easy as (Pizza) Pie Polenta Crust
- one package of Trader Joe's pre-made polenta
- 1-2 tbs Vegenaise or other non-dairy mayo
- 1 cup gluten-free flour (we used Bob's Red Mill. Team Bob!)
- 1/2 tsp baking soda
- Your favorite Italian seasonings (we used garlic, crushed red pepper, oregano & sea salt)
Mix all ingredients together until dough-like and roll out onto a pizza baking sheet or pizza stone. Pop into a 375-degree pre-heated oven and bake for 40 minutes total, flipping dough after 20 minutes to allow the other side to cook evenly. Top with your favorite sauce & veggies, and sprinkle with GOVeggie! cheese. We use GOVeggie! because (besides the fact that it's non-dairy) it has a nice flavor and gets super melty... which is the most important part of enjoying a pizza honestly. Pop the pizza back into the oven until your cheese melts, let cool for 5 minutes, then dig in!
