This recipe HITS the spot when you're craving a hearty white sauce. With a few tweaks to the recipe you could use this sauce for a LOT of dishes. Definitely keep this one on hand.
-3 Tbsp of Earth Balance Butter
-4 cloves of garlic
-4 Tbsp of all purpose GF flour
-2 cups of unsweetened soy milk
-2 Tbsp of nutritional yeast
-1 package of medium firm tofu (be sure to drain water)
-½ package of GO Veggie shredded Mozzarella
-Salt and Pepper to taste
-Green onion (optional)
In a large skillet, saute garlic in butter at medium heat. Once slightly golden, remove from heat and add to a blender. Add remaining ingredients (except for green onion and lemon) to blender. Blend until creamy. Transfer mixture back to skillet and cook on medium heat until it bubbles, then reduce heat to low and cook until thickened, stirring frequently. If the sauce is too thick, add a little more milk, if you like it extra cheesy, add remaining contents of cheese package. Once sauce is to your desired consistency, remove from heat. Stir in juice from half a lemon and top with chopped green onion.
